Am I right in thinking that I could use a custom datasource on a page to automatically update an entry bases on some Get or Post variables?

I need this for a payement service I am using which calls a url in the background to update the ‘payed’ status of an order.

Yep, an Event is used to insert or update an entry. Usually an event is attached to a page and listens for $_POST variables matching certain conditions, trigger the event and update an entry (or entries). Your custom Event could create the $_POST variables itself just before the event triggers, thereby updating without you needing to send a POST directly.
