I know you can add a datasource to import xml, but is it possible to somehow suck in those rss feeds into symphony entries (for easy editorial formatting, etc...)

Pat, if you mean actually writing into your symphony database from an RSS feed, I don't think there is anything that does that currently. Being able to point an XML document (rss or other) towards a section and have entries created would be a very useful tool for a lot of different applications (importing docx and odf files, rss feeds, exports from other cms's, etc.) but nobody has created it yet.

However, depending on what you need to modify, XSL can really do a lot of work. See this article about using XSL to modify your output. If you want to actually edit the copy non-progammatically, then you're out of luck for now.
