Does anybody know if there is a way to exclude a single page from maintenance mode?

I've got a page that dynamically call another page in the XSL via document(). If my site is in maintenance mode this call imports my maintenance mode page.

Unfortunately no. You could use ?auth-token=XXX on that document call (where XXX is an author token), which should work.
