Symphony 2.0.1 works on HostGator (tested on Hatchling -Linux-) but be careful with the file permissions, because some are blocked by the server, for example 777, wich produces a server 500 error.

From one of the admins:

"Although some instructions do call for 777 or 666 permissions, this is not good advice, and is not necessary on Hostgator servers. For security reasons, the server refuses to run scripts that have permissions such as 777 that allow other users to overwrite the script. The same applies if the directory has such permissions. If your script installation instructions call for 777 permissions you can use 755 instead, and if it calls for 666 permissions you can use 644 instead. In general, directories should have 755 permissions and files should have 644 permissions, except for scripts in your cgi-bin directory which should also have 755 permissions."
