So I know you need to add any external sites to the trusted sites for JIT to use external sources. However I am currently using the oembed extension to find the location of the image and the oembed service returns different sub domains for certain sites. For example youtube returns something liek this i2.ytimg.com and i4.ytimg.com.

I have tried adding *.ytimg.com/* and i*.ytimg.com/* however neither of them work. It seems like I have to include each sub domain for it to work i2.ytimg.com/* or just leave an asterisk inside the box to allow all external sites as a trusted site.

Does anyone know away around this?

Try to put the asterisk at the end, e.g. i.ytimg.com*, that works for me.

That doesn't seem to work with version 1.16, not sure what version your using. But the only way I could get it to work was by putting an asterisk inside the box, which allows everything. So I added an if statement to allow a wildcard to be used for sub domains and submitted a pull request.
