I have a page with multiple datasources that I’m trying to output in xml. That’s working fine except the text is all being html encoded which I don’t want. I’ve played around with the datasource setting “HTML-encode text” but this doesn’t do anything.

Is it possible to do this?

Usually, when the “HTML encode text” checkbox is disabled, Symphony returns valid XML as your text markup. Are you sure the text you’ve entered doesn’t contain entity-fied elements?
