How possible is it to create a new front-end for Symphony? Are there any tutorials on it at all?

Do you mean you have installed Symphony, seen the default blog "workspace" site that comes with it, and you want to change it? The blog is intended just as an example — a tutorial and learning aid. You can build anything you want!
